And the Diet Continues...

To say that I am frustrated with the SC Diet is an understatement! As I try to find recipes and blogs for ideas I am finding that we can't do the SCD and here is why; the SCD allows eggs, butter, and cheese but we can't have eggs, butter, and cheese due to Haiden's food sensitivities. So I'm on a mission to heal my son's gut with our own diet! A diet full of vegetables, fruit, nuts, and beans. I'm going to call it the H.H. diet (Haiden's Hope). So if you have any delicious recipes with any of those foods please share!

  1. Oh, I have a great recipe I got from my sister. (She's basically on an H.H. diet with sodium restrictions because of heart issues). I usually pair this recipe with a salad and garlic toast. Hope it works for your family!

    White Bean and Pasta Soup

    1 can Great Northern beans (15 oz), rinsed and drained
    3 cups low-sodium chicken broth
    1 cup diced tomatoes
    1/2 tsp oregano
    1/2 cup miniature pasta shells
    Shredded Parmesan cheese (this makes it taste great, but you could maybe leave it off Haiden's)

    In a large saucepan, combine beans, broth, tomatoes and oregano. Bring to a boil over medium heat. Stir in pasta. Cook, partially covered, for 7 minutes or until pasta is tender. To serve, ladle into soup bowls and sprinkle with Parmesan cheese.
